Today I’m going to tell you guys how to make my absolute FAVORITE dish, which coincidentally, happens to be my favorite movie also. Yup, you guessed it, RATATOUILLE.
I’ve known since I was old enough to turn on the stove that I wanted to be a chef. So of course when Ratatouille (A movie about a rat who desires to be a chef) was released back in 2007, I fell in LOVE. If you haven’t seen it yet, I highly suggest you go watch it.
Now you may be wondering, “What the heck is ratatouille?” Ratatouille is a French Provençal stewed vegetable dish consisting of thinly sliced yellow squash, zucchini, eggplant, and tomatoes in a tomato sauce arranged in a circular pattern.
The first thing you’ll need to invest in for this dish is a mandoline slicer. This kitchen device is used to evenly slice fruit and veggies. I bought mine from Walmart for around $14. Here's what your slices should look like:
Equipment you will need:
1 medium-sized baking dish
1 small sauce pot
A mandoline slicer
A cutting board
1 rubber spatula
2 yellow squash
5 Roma tomatoes 1 15oz can of tomato sauce
3 garlic cloves
2 bay leaves
1/2 yellow onion (diced)
1 tsp of granulated garlic
1 tsp of dried oregano
1 tsp of ground cumin
1 tsp of kosher salt
1/2 tsp of crushed red peppers
1/2 tsp of black pepper
Preheat your oven to 350 degrees
Slice your zucchini, squash, and tomatoes using your mandoline.
Put your tomato sauce, garlic cloves, bay leaves, and onion in your sauce pot and bring to a simmer. Let it simmer for 3-5 minute.
Add your herbs and spices to the sauce and stir.
Pour your sauce in your baking dish and smooth completely across the bottom.
Arrange the sliced veggies in alternating patterns, (for example, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan.
Sprinkle oregano on top.
Cover the pan with foil and bake for 20 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.
Serve while hot. Enjoy!
