Parmesan Crusted Zucchini Rounds


Hey Foodies! 👋🏾

Growing up, I never really liked zucchini. As an adult trying to remain healthy, they have actually become one of my favorite vegetables. This recipe is super EASY and DELICIOUS. 𝙻𝚎𝚝’𝚜 𝚐𝚎𝚝 𝚒𝚗𝚝𝚘 𝚝𝚑𝚒𝚜 𝚛𝚎𝚌𝚒𝚙𝚎!


Equipment you will need:

  • 1 medium sized cookie sheet

  • A small bowl

  • A spatula

  • A spoon


Ingredients:

  • 4 small zucchini

  • 1/2 cup of grated parmesan cheese

  • 1/2 cup of panko bread crumbs

  • 1 tbsp of black pepper

  • 2 tsp of granulated garlic

  • 2 tsp kosher salt

  • 2 oz of vegetable oil

Steps:

  1. Preheat your oven to 375 degrees.

  2. Slice your zucchini into 1/2 inch thick rounds and toss them in your vegetable oil.

  3. Mix your Parmesan cheese, bread crumbs, salt, pepper, and garlic in a bowl.

  4. Coat your zucchini slices in your bread crumb mixture by firmly pressing both sides into the mixture.

  5. Arrange them on your cookie sheet, leaving about 1/4 of an inch between them.

  6. Bake for 15 mins, then use your spatula to flip them over and bake for another 15 minutes.

  7. (Optional) Turn your oven to broil and bake just enough for your rounds to get your desired color.

  8. Serve immediately.
